Learn how to care for your oak chopping board to prevent cracks. Simple cleaning, oiling, and storage habits keep solid wood boards in top shape for years.

Quick answer

To keep your oak chopping board from cracking, wash it by hand, dry it upright, and oil it regularly with food-safe mineral oil. Avoid the dishwasher, soaking, and leaving it near heat or direct sunlight.

Why oak boards crack

Oak is a durable hardwood, but it still reacts to moisture and temperature changes. When the wood dries out unevenly, it shrinks and can split along the grain. The most common culprits are dishwasher cycles, prolonged soaking, and storing the board flat on a wet surface.

The oak used in Robert Welch® chopping boards comes with a food-safe oiled finish that helps protect the wood. That finish needs maintenance. As the oil wears off, the wood becomes more vulnerable to moisture absorption and drying, which raises the risk of cracks.

The trade-off with wooden boards

Wooden boards are gentler on knife blades than glass or stone, but they demand more care than plastic or composite boards. If you prefer a set-and-forget option, a wood board may not be the best fit. But if you are willing to spend a few minutes each month on oiling, a solid oak board can last for decades and look better with age.

Diagnose and fix board cracks

  • Symptom: Small hairline cracks appear on the surface or along the edge, or the board feels rough and dry to the touch. Check your board monthly for these signs.
  • Likely cause: The board has been washed in the dishwasher, soaked in water, or stored flat on a wet counter. The oil finish has worn off, leaving the wood exposed. Stop using the dishwasher and never let the board sit in water.
  • Corrective action: Sand the surface lightly with fine sandpaper, wipe off dust, then apply a generous coat of food-safe mineral oil. Let it absorb for a few hours or overnight, then wipe off the excess. Repeat monthly or whenever the wood looks dry. Set a monthly oiling reminder.
  • When to stop or replace: If cracks are deep enough to catch a fingernail, or if the board splits into separate pieces, stop using it. Deep cracks can trap bacteria and may worsen with continued use. Replace the board at that point. When in doubt, replace the board.
